Happy New Year!!!

After a year of indulging in delicious dishes I’m ringing in the new year with my fingers wrapped tightly around a scrumptious smoothie as visions of resolutions dance in my head.

Do you make New Year resolutions? I usually think about making them and then never see them through to fruition. So this year I’ve just made a little promise to myself. I’ve decided to make sure that I carve out the time to embrace and celebrate my family, friends and food each and every day. It’s a simple concept but one that I want to keep in the forefront of my mind rather than on the sidelines of a busy hectic life.

Family, friends and food. My trifecta of life.

That’s what I love about Ree’s (aka The Pioneer Woman)  new book. Whether she’s sharing her recipes and stories on her blog or celebrating life on the ranch on television, she always seems to eloquently celebrate the magic that comes together with friends, family and food. Recently I have been thinking a lot about my close girlfriends and how important those relationships are to me. When I look back over the years I realize I met so many of them during those unforgettable bonding experiences that life brings your way. There is a lot that I love about the Adventure Getaways that I’ve been doing over the last two years, but my hands down favorite thing is watching women come together from across the country, meet each other for the first time on Friday afternoon, and leave on Sunday as lifelong friends.

Since I hosted my first Adventure Getaway a year and half ago, (where Wendy was a guest!), I have been amazed to see how many different types of women have had a desire to come on these adventure trips with me and challenge themselves to experience new things.

There is something about these Getaways, every single time I say to myself, “wow, I couldn’t have hand picked a better group of women to come together as total strangers and bond as if they had known each other for years.” I feel very lucky to witness and take part in this sort of togetherness and am grateful to have met so many wonderful people along the way and to share all kinds of adventures, laughter, and good food with them. I’ve made friends for life.

Wendy joined me on the inaugural event along with some of my favorite food bloggers on the planet.
Since those first successful trips, I have expanded the adventures in weird and wonderful ways, and these are some of the highlights I thought I’d share.
2013-08-07_0007 One of my favorite parts of the weekend is the girl bonding by the fire pit. There are lots and lots of s’mores. Some women even bring their own retractable s’mores sticks, they mean business. 2013-08-07_0010

There are really cozy accommodations, sometimes we even each have our own little house with a wood burning fireplace. Other times, it is a log cabin with mountain views. 2013-08-07_0012 And my personal favorite are the many types of bubble baths. A woman needs that after a long day of adventure. 2013-08-07_0008 I also love the food we have had on our menus, from elk, to venison, to frogs legs, oh my! Plus the delicious berry mousses and beignets smothered in ice cream. Sometimes we even have special Bourbon Dinners with live entertainment. 2013-08-07_0009 Since I am a chef by trade, I’m all about the learning. We have cooking classes galore. Ever wanted to know how to clean and butcher a bird properly? No problem. How about some amazing Texas shaped cookies? We’ve got you covered.Girl Hunter Baking by TidyMom On special occasions, we even have guest teachers who teach us to make amazing cookies and cake pops. 2013-08-07_0011 Then there is the adventure. We ladies get together on ATVs and drive 10,000 feet into the Montana mountains. 2013-08-07_0006 Or walk in the snowy hills and hunt wild birds, wild hogs, deer and the likes, many of the ladies do this for the very first time with professional guides and beautiful bird dogs along with them. Sometimes you’ll even find yourself hunting with men in kilts (see above, yikes!). Fly fishing...

We fly fish and listen to the meditative sounds of the rivers rushing around our ankles while we wear our waterproof waders. 2013-08-07_0005 There are plenty of ranger rides…

And of course there are presents, because what’s a party without them?!

Once a year, I host one co-ed couples event. As I like to say: The couple that prays and makes venison sausage together, stays together. And the best part of all…

…is all of that girl bonding that happens. We all make friends forever, support each other to roll up our sleeves and step outside our comfort zones… we all have a desire to experience life more viscerally. 2013-08-07_0004 To surprise ourselves! And give each other hugs.

I’ve become familiar enough with the amazing venues around the country, that I can customize experiences each with their own unique attributes so that no one trip is ever the same. She had such a ball making and baking Bridget’s scrumptious vanilla-almond sugar cookies! She was so excited that she even grabbed my camera and snapped a few photos of the process!

Tangy Orange-Glazed Grilled Chicken & Giveaway! (Giveaway Closed)

This time of year is bittersweet for me. Summer is winding down, the kids are back to school (my house is painfully quiet) and the days are slowly getting shorter. But you know what? That isn’t going to stop me from savoring summer for one last long weekend! Labor day is coming up and I plan to savor every last glorious drop of summertime by firing up the grill and enjoying some scrumptious food with friends and family! AND I’ve got a fun giveaway to make your Labor Day even more wonderful thanks to the kind folks at Bush’s Beans!

But first I’ve got a mouthwatering recipe that you can put together in minutes! Tangy Orange-Glazed Chicken breasts that will tickle your tastebuds!

It begins with a glaze that is full of fresh flavor. Here are a few of the star ingredients…

Orange juice, garlic, fresh cilantro and a mix of cumin, coriander and paprika. The glaze also includes ketchup, brown sugar and hot sauce (not pictured) for an added sweet & spicy kick.

This glaze smells as glorious as it tastes.

It’s like no other glaze I’ve ever tasted. The hot sauce, brown sugar & ketchup give a deep rich & spicy flavor, while the orange juice & cilantro add a tangy fresh punch and the spices give it a warm finish that just lingers on your palate. My Yanni developed this recipe and I would like to state for the record it’s #3,256 why I love him so.

We paired the Tangy Orange-Glazed chicken with Bush’s® Sweet Mesquite Grillin’ Beans.

I recommend that you do the same. The black beans simmered with pieces of red peppers & onions in a sweet & smoky sauce complimented the chicken in the most beautiful way.

It was a match made in culinary heaven. *insert angels singing*

Here’s the recipe!

Tangy Orange-Glazed Chicken

(Serves 6)

Ingredients:

Seasoning:

  • 1 Tbsp Cumin
  • 1 Tsp Coriandor
  • 1 Tsp Paprika
  • 1/4 Cup chopped Cilantro
  • 1/2 Lime’s juice
  • 1/2 Tsp S+P
  • 1/2 Tbsp Olive Oil

Glaze:

  • 1 Cup Orange Juice
  • 1 Garlic Clove
  • 2 Tbsp Ketchup
  • 1/4 Cup Brown Sugar
  • 1 Tbsp Mexican Hot Sauce
  • 2 Tbsp Cumin
  • 1 Tbsp Coriander
  • 1 Tbsp Paprika
  • 1/4 Cup chopped Cilantro
  • 1/2 Tsp S+P
 First prepare the glaze. Finely dice garlic clove, then mix 1 tsp course salt pressing carefully with the knife until the constancy of a paste. Mix all other ingredients in a sauce pan. Let simmer on a low heat stirring frequently until reduced by about 1/2 (about 20-30 min).

As the glaze is reducing, season chicken with Cumin, Coriander ,Paprika, chopped Cilantro, Lime juice, hot sauce, and S+P to taste.  Place on grill on high heat to quickly sear both sides, then turn again, this time glaze chicken at each flip. Cook until internal 165° F (about 20 min depending on heat settings).

When done, baste chicken with glaze one last time then let it rest for 5 min. Serve with additional side of glaze and Bush’s Sweet Mesquite Gillin’ Beans.

Greek Fetish Hamburgers & Giveaway (Closed)

Last weekend we had a tailgate with friends. We all enjoyed a day filled with food, fun & football. I got busy setting the scene for the festivities and My Yanni who doubles as My Grill Master was in charge of the grill and cooked up a delicious storm. I’ve already shared our fun & easy idea for an everyday bratwurst…

These burgers are a crowd-pleaser that are packed with a big flavor punch. My Yanni (who happens to be Greek) and I are big fans of feta. We have an ongoing joke at our house that “everything tastes betta with feta.”

These burgers are no exception.

Greek Fetish burgers are filled with salty crumbled feta, diced sweet onion, tangy sun dried tomatoes and dried oregano.

I told you that they were packed with flavor.

We garnished our burgers with a mesclun mix that included a little (more) feta & red peppers tossed in olive oil & red wine vinegar.

And to take it a step further, topped it all with a dollop of tzatziki.

Oh heavens was that a tasty mouthful.

We served our burgers with some delicious  Bush’s® Homestyle Baked Beans for the perfect hassle-free game day combination.

The down-home flavor of the Homestyle baked beans in a tangy sauce with specially cured bacon and brown sugar were the perfect match for My Yann’s Greek Fetish Burger.

Greek Fetish Burgers

(makes 12 burgers)

What You’ll Need:

3 pounds of your favorite ground meat (we used ground sirloin)
3 ounces crumbled feta
4 ounces sun dried tomatoes packed in olive oil -chopped
1 medium sweet onion -chopped
3 teaspoons dried oregano
1 teaspoon salt
1 teaspoon pepper

What To Do:

Mix all ingredients in a big bowl until incorporated. Shape into 12 burgers about 1/2″ thick patties and about 6 inches in diameter. Place on med-high grill (or a skillet) and cook for 4-6 minutes (3 minutes on each side) until cooked through. (Note: heat temperatures, thickness of burgers etc. can effect cooking time.)

An Evening with Orville & Sandra Dee (and a Giveaway)

It’s FRIDAY!

After a looooooooong week I’m always ready to just crash. But somehow it never quite seems to work out that way. You see I’ve got two sweet little girls…well, actually a 10 yr old and a teenager.

*cough, cough*

How on earth it is possible that I have a teenager I’ll never know.

But let’s just say that trying to decide what to do each weekend that appeals to each of the four family members in my home has become, well, downright impossible.

That was until Orville Redenbacher came back into my life. Remember him? Takes me back to my teen days and the commercials that would echo throughout the house…”or my name isn’t Orville Redenbacher” while I was dramatically delivering MY own plea to my parents about wanting to see MY friends NOT hang with the family.

Le sigh.

What comes around goes around.

You see I was invited to try some the Orville Redenbacher “Pop & Win” microwave popcorn recently and my mind began racing. I decided that it would be the perfect bribe addition to a family movie night! So I informed the kids that there would be plenty of popcorn…

and that they would get to pick the movie…

(gulp) and a family night was set into motion. To my delight they decided on one of my all time favorite movie musicals -“GREASE.”

I was a happy mama.

In between the countless sing-a-longs by myself & My Yanni (and occasional eye-rolling by the children) we all had fun taking turns tossing the bags of popcorn into the microwave and waiting in suspense to see if we had won!

The kids soon started to realize that it wasn’t all that bad spending time with the rents.

Kinda.

And then guess what? After about 3 bags of popping…

We WON!

And then they really started realizing that it wasn’t that bad spending time with the rents.

We won 50 free prints from Snapfish Photo! How cool is that?!? One in every six bags is a winner! And you have a chance to win Wii™ console and games, HDTVs, laptops, movies and more!

Our Friday movie night was complete. And everyone was happy.

I’m pretty sure that it’s safe to say, a family movie night paired with some delish Orville Redenbacher popcorn sure does go together like ramma lamma lamma ka dinga da dinga dong…

A BIG FAT Tuesday Giveaway

Happy Mardi Gras ya’ll!

It’s been a loooooong, cold winter here in suburbia and I’m ready for some serious fun. Today is “Fat Tuesday”, a day in New Orleans known for decadence, overindulgence, and a “last hurrah” before the season of Lent sets in. I’ve decided that today would be the perfect day for a giveaway for all of you. The generous folks at CSN Stores have offered my readers (that’s you) a $65 gift certificate to any of the online CSN Stores. Have you ever heard of CSN Stores? Come to think of it, I’ve been looking at flat panel tv stands myself for sometime now…hmmmmm, perhaps tonight after our festive Mardi Gras meal would be the perfect time to casually drop a hint to My Yanni about buying a new one. <insert evil laugh here>

Speaking of King Cake…I bought this King Cake today in celebration of “Fat Tuesday”.  My Yanni is from New Orleans and I love to surprise him with a King Cake every year. It’s become a treasured tradition in our house, beads and all.

Forget the fact that I didn’t make it. It’s the thought that counts right?

However, I am making mouthwatering Jambalaya that’s bubbling on the stove as I type. That should count for something.

After we dine on the Jambalaya we’ll dig into this scrumptious King Cake (and possibly shop online) and find out who the lucky duck will be…

Yes, I know that’s a plastic naked baby. It’s what a King Cake is all about.

Don’t ask me why. I don’t ask questions when it comes to Mardi Gras. It’s serious business folks and My Yanni knows. He’s from New Orleans so I listen (I know when to hold ’em, I know when to fold ’em, I know when to walk away and I know when to take a pastry & its’ naked plastic baby seriously).

So TRUST me, you actually WANT to find the plastic naked baby in your piece of cake, it’s good luck.

And speaking of good luck,

Popchip-alicious Encrusted BBQ Chicken (& Giveaway)

POP-alicious…

POP-tacular…

POP-abulous…

These are just a few of the words that popped into my head as I was scarfing my way through bags of popchips as I sat on a plane in San Francisco preparing to fly cross country back to my safe haven of suburbia.

I had just attended BlogHer Food 2010 and was in no way prepared for the multitude of fantastic people, phenomenal food, plethora of information and bags of swag that I would be encountering.

I mean, wow.

I hadn’t slept in over 24 hours, I had enough adrenaline pumping through my veins to fuel the plane in which I sat and I had just been forced to walk about 5 miles (most of which was outside AND it was 4:00 a.m. AND pitch black) just to get to my correct terminal.

Which reminds me that I need to fire my secretary a.s.a.p.

Needless to say, by the time my fanny hit the seat in that plane I was ready to have a meltdown. I knew that I’d feel much better after some breakfast and a little nap. I patiently waited for breakfast to be served and then quickly realized that, um there would be no breakfast. And I was facing about 10 hours of travel, 2 plane changes, one time change and I had packed all of my swag on my bag that was now so nicely stowed beneath the plane.

Through a blur of sweat and tears, I frantically dug in my bag to find, something, anything, a piece of gum, a lone lifesaver specked with mystery fuzz. I didn’t care. I needed some nourishment and I needed it now.

It was then that I saw them, tucked neatly and placed to the side of my bag as to not get crushed, 3 bags of popchips <insert angelic music with parting clouds here>.  Now I remember…I had decided to put the popchips in my bag because they were light and would be a perfect snack.

Note to self, don’t fire my secretary. I guess that I’m o.k. after all.

If I had a video of the glee and elation that I experienced while eating all three of those delicious bags of popchips while on that plane…

well, I probably couldn’t share it with you because it would be too embarrassing but let’s just say I was mighty happy.

Once I got home the nice people of popchips asked me if I’d like to do a review & a giveaway. Are you kidding me? OF COURSE! These light & crunchy, packed with flavor, low fat little rounds of heaven needed to be passed on to my readers. Not to mention, my poor family with whom I had already shared my life and death story and then sheepishly had to admit that no, they couldn’t sample these incredible chips that had saved my life because they were…all gone.

The minute I received this oh-so-fun-box and POPPED it open, I knew just what I had to do.

I had to make a meal out of these little yummies for my whole family to enjoy.

And boy did they.

Now you can too.

Without further adieu, I give popchip-alicious encrusted BBQ chicken to you.

These would be the supporting characters…flour, BBQ seasoning, an egg, and chicken breasts.

And but of course, the star of the show…BBQ popchips.

The first thing you’ll want to do is pour your bag of popchips into a zip lock bag, seal it, and roll the popchips with a rolling pin. Now make sure to smush them up into small pieces, small enough to easily stick to the chicken without turning into mush.

Now it’s time to put your assembly line together. Pour about 1 cup of flour onto a plate and add about 1/4 cup of BBQ seasonings and mix well with a fork.

Next grab a second plate (preferably with a lip) for the egg that’s been lightly beaten and then a third plate for your smushed popchips.

This is what your assembly line should look like…

Now the fun begins.

Grab your chicken breast and cover it with the flour mixture,

don’t forget to cover the other side.

Next, pop I mean, plop the chicken ever so gently, into the egg, on both sides…

then joyfully smather the chicken with the popchips.

Make sure to get plenty of the crunchy yummy little pieces all over the chicken until the chicken is literally popping with popchips.

Cheesy I know, but I couldn’t resist.

Next place the popchip-alicious encrusted chicken breasts onto a baking sheet…

and POP them into the oven…

and then into your mouth.

Repeat as necessary.

Here’s the recipe…and be sure not to miss the GIVEAWAY below!

Popchip-alicious Encrusted BBQ Chicken
serves 4

Here’s what you’ll need:

  • four chicken breasts
  • 1 cup flour
  • 1 bag popchips
  • 1 egg
  • 1/4 cup BBQ seasoning
  • 1 large zip lock bag

Here’s what you’ll do:

Preheat the oven to 375º. Next, pat your chicken breasts with a paper towel until dry, set aside. Pour your bag of BBQ popchips into a large zip lock bag and roll over popchips with rolling pin until smashed into small pieces. Then on a small plate, mix 1 cup of flour with 1/4 of BBQ seasonings, on a second small plate beat your egg and lastly on a third plate, pour the smashed popchips that will become the delicious crust. You are ready to begin the assembly process. First, cover both side a chicken breast with the flour mixture, then dip in egg and finally cover generously in the smashed popchips. Repeat the process until you’ve covered each chicken breast. Bake the encrusted chicken on a baking sheet for 30-45 minutes depending on thickness of chicken and until chicken is cooked through.
