Jello has always held a fond place in my heart. Growing up, my beloved mother would try and try again to make the mysterious colorful wobbling confection. And much to her chagrin, the gelatinous delicacy always refused to set up. I can still remember her talking out loud to herself in the kitchen as she would almost negotiate the directions to an empty container and then ask me or my sister to witness her attempts to follow them perfectly.

We would all nod our heads and agree emphatically that indeed every step had been painstakingly followed as we watched her place the container ever so delicately into the fridge. When the time was up, we hurried back into the kitchen to watch the unveiling of another watery disaster.  Simultaneously, the three of us would break into hysterics as we took turns poking and prodding the poor lifeless jello. It was at this stage in the game that my dad would enter the room, pipe in hand, eyes twinkling as he would give my mom a gentle kiss and proclaim that she was the very best at unsuccessful jello making. He always knew and still knows, how to see my mom in the most beautiful light.

There’s not a jello making moment in my kitchen that I don’t think of my mom and those sweet memories and smile. Or sweat tiny beads of worry that somehow jello karma will haunt me and make my jello follow suit of my mama’s.

I’m not exactly sure what made me decide to experiment with making a rainbow out of jello. Maybe it was because I’ve always made jello with a bit of trepidation and I wanted to burst through the will-my-jello-set fear and cross over that rainbow connection. But I’m here to tell you that these rainbow jello jigglers are as much fun to make and look at as they are to eat.

They make a perfect addition to a special occasion like a birthday or St. Patrick’s Day celebration. And I dare you to look at one and not smile.

Rainbow Jello Jigglers
Recipe Type: Dessert or Snack

These rainbow jello jigglers are sure to put a smile on anyone’s face. They’re a sweet treat that’s fun to eat for kids and adults as well!
Ingredients
  • 1 cherry packet of Jello
  • 1 orange packet of Jello
  • 1 lemon packet of Jello
  • 1 lime packet of Jello
  • 1 blue raspberry packet of Jello
  • hot water
  • 6 small metal tin cups
Instructions
  1. Put 6 small metal cups on a tray that holds the cups tightly so they won’t tip over.
  2. In a bowl, mix 1 1/2 cups of hot water with the cherry Jello packet and stir until it completely dissolves.
  3. Pour 1 inch of the Jello liquid into the bottom of the containers and let set in the fridge for 30-45 minutes.
  4. Repeat the same directions for the remaining Jello packets. Remember to let the liquid mixture cool off a few minutes before you pour it on top of the already set Jello. This will help the already set Jello to not melt when you pour the next color on top.
  5. Once the last color is poured, let the rainbow cups sit in fridge for at least an hour.
  6. When ready to use dip the cups quickly into hot water to release the Jello. Be careful not to let the water get inside and don’t leave them in the hot water for more than a minute to ensure they don’t melt.
  7. Turn the cup upside down onto a plate.
  8. Grab a spoon and dig in!
